To be used in your Appolia Tajine

Ingredients for 4 people

600 gr of ground beef (1.30 lbs), 4 eggs, 5 tomatoes, 1 onion, 1/4 teaspoon of sweet chili pepper, 1/2 teaspoon of Paprika, 1/2 teaspoon of cumin, fresh parsley, 3 tablespoons of olive oil, salt & pepper.

Preparation time: 20 minutes

Start by mixing the ground beef, 1/4 chopped onion, and fresh parsley. Add the spices. Mix everything with your hands, and prepare some meat-balls. Pre-heat your Appolia Tajine on direct flame, pour in the olive oil. Add cubes of tomatoes, 1/2 chopped onion and fresh parsley (add 1/2 glass of water if tomatoes don't give too much juice). Let it cook on soft flame for 10 minutes with the lid on.

Then add the meatballs and let it cook for 15 min on medium flame, with the lid on.

Break the eggs in to the dish, spread them all over, and add salt & pepper.

Leave the Tajine Covered until the eggs are ready. Then serve and enjoy.
